The Wall Street Journal reports that because of high beef prices, increasingly the choice of low-carb dieters is pork, which costs about two-thirds as much as beef and is growing “at a pace that is putting slaughterhouses on overtime and yielding big profits for long-struggling hog farmers.”

As a consumer, we’ve certainly noticed the increase in beef prices and have been using pork more and more often. It appears our experience is reflective of a larger experience…and it would seem to make sense for retailers to respond to this shift by expanding their selection of pork products.
