CNN reports that 7-Eleven has been “quietly” testing an upscale format in several dozen Texas stores, focusing to a greater extent on fresh foods such as apples, oranges and bananas, grilled-pressed sandwiches, bakery goods and a variety of salads.

The goal, according to reports, is to mimic the company’s successful fresh food strategy in Japan, where perishables account for as much as 45 percent of sales. Fresh food only generates 10 percent of sales in the US.

This is sensible, forward-thinking, and inevitable.

And from we’ve seen of 7-Eleven CEO Jim Keyes, he seems like the kind of guy who will have the patience to see this through and to do it right.
